The company “Parma Is: Fresh Ideas” is based in Traversetolo, innovative in terms of structure and machinery, is in possession of the most important certifications in terms of quality and food safety. In particular, the company is among the few in Italy to use HPP technology.
HPP technology: what it is
The acronym HPP stands for High Pressure Processing (in Italian: treatment with high pressures). The HPP method is an innovative process that subjects food products to pressures thousands of times higher than atmospheric pressure.
In this way, without heat input, the microorganisms present in food, both solid and liquid, are inactivated, so as to make the food microbiologically stable, conservable and safe. Today, HPP technology is widespread in the US and is present in Japan and Australia. The need to preventively guarantee foods that are safe for the consumer also entails qualitative advantages: the high pressures, in fact, ensure an increase in the shelf life of the products treated and the maintenance of a better quality during their commercial life.
