The Palo Company was founded in 1935 in one of the most fertile areas of the Campania region, the mythological Sele plain, famous for the evocative and exciting atmosphere of the ancient Paestum.The plain rich in organoleptic properties favorable to any type of crop, finds the its greatest momentum in the cultivation of tomatoes. It is a family tradition that binds the Administrator Nicola Palo to the history of this land, to tomato and its transformation. A childhood enveloped by the scent of the expanses of the tomato fields owned by the grandfather, a youth dedicated to the passion for the study of agronomy and an innate entrepreneurial verve, soon outline the profile of an entrepreneur who turns his passion into a style of life with the sole objective of quality The Company chooses to bring to the table every day the taste of genuineness and the freshness of the fruit as if it had just been harvested and it does so by seeking the highest quality in every stage of the production chain since the careful selection of seeds that occurs in the family nursery. It is now in its 3rd generation and since its inception it has established the headquarters with its production plant for processing, in the area of Fisciano (SA), a town close to the city of Salerno, well connected to the motorway junctions where the University of Salerno is also located, often consulted with regard to new technologies to be used in the production field. It is from the collaboration with the aforementioned University and from the continuous search for a production cycle always aimed at a higher quality that we have adopted a process called which after an experimental phase lasting approx. 3 years by a group of 3 universities, has given excellent results in the field of pulsed electric field (PEF) technology. This procedure, currently applied with pride only by our company, arises from the need to guarantee our customers a quality standard at the highest levels. In fact the PEF with faster steam penetration into the peel, allows easier peeling and, in addition to keeping vitamins, antioxidants and pigments unaltered, considerably reduces tomato waste and favors a large saving of water and energy.
The PEF also allows the increase in the juices and purees of lycopene , which as known is known for its benefits on the immune system and for its antioxidant, anti-inflammatory and antitumor effects.To keep the quality standards constant, we have foreseen in the ethical code, attention to the entire production chain, which goes from respect to all the people interested in the tomato harvest, under the conditions in which the product arrives in the company, with particular care for it since its sowing On the basis of this we have established special relationships with our farmers, also recognizing a higher price, but demanding in exchange a raw material that has better requirements than the standards currently on the market. To date, the company transforms approx. 300,000 quintals (three hundred thousand) of tomatoes with a particular predilection (100,000 q. li) to the product coming from organic agriculture and has its core business in the San Marzano DOP tomato (authorization granted by the Consortium which includes about fifteen companies) and in some specialties such as the Datterino Peeled, the Fillet of Peeled Tomato. Our claim “the good of our land” represents the inspiring principle, for which in every single production our supply chain standards have all the indexes pointing upwards, this way of operating has led us to a very high quality that the various markets, especially foreign ones (USA, CANADA, ENGLAND, GERMANY, JAPAN) have recognized us with an ever-increasing presence in their territories.
